Store raw salmon on the coldest part of the fridge, ideally on ice in a sealed container, on the bottom shelf so juices can't drip. Buy from a trusted source and check the use-by date. If you can't cook the same day, freeze immediately — re-wrap tightly in freezer paper or vacuum-seal to prevent freezer burn and odor transfer. Thaw in the fridge overnight, never on the counter. Smoked salmon should stay sealed until ready to eat.
